No Bake Recipes * Peach Freezies

I am lucky enough to have a mother-in-law who loves to can peaches, and cans them she does, every year. I’m also lucky enough to have a husband who loves canned peaches and loves cooking in the kitchen as long as the recipe has no more than three ingredients.

For example, his go-to meal is brown rice mixed with salsa and maybe some cottage cheese thrown in for good measure. (Fortunately he doesn’t do the cooking very often.) Funny thing is, even though the kids prefer my culinary skills, their most favorite thing, especially in the summertime, is a specialty of my husband and includes said peaches. (By the way, I use the term “recipe” very loosely because this frozen concoction consists of two ingredients: canned peaches and ice.)

We affectionately call them “Peach Freezies” but you can call them whatever you’d like! Feel free to build on this recipe by throwing in some frozen banana chunks (a great way to use up those spotted bananas that ripen so dang quickly in summer) or your favorite frozen or fresh fruit. Of course, we always come back to the plain ol’ Peach Freezie. There’s just something about its simplicity my family loves. And I love that I don’t have to make them, though I do still get stuck with the dishes. I haven’t yet figured out how that happens…

Peach Freezies

1 quart canned peaches
Ice

Place half the canned peaches and juice (feel free to guesstimate) in your blender. Add about an equal amount of ice. Puree until it reaches your preferred consistency, adding ice if mixture is too thin and water if mixture is too thick.
* Serve immediately garnished with a bendy straw because…well…those are the best!

yum – i love anything peach. Peach Days – Brigham City September 11th. I’m just saying that is where you’ll get the best peaches to can. (Not that I know how to can, cause I don’t but love scrounging them off of those that do know how).
