Root Beer Cookies

You may look at this recipe and think one of many things:

* “Mmmm those look delicious! Too bad her camera doesn’t do the cookie justice.”

* “Root beer? In a cookie? I never heard of such a thing!”

* “If I dunk it in milk, it would be like having a root beer float!”

What I think of when I see these cookies is: Entrepreneurship! (it IS a word, and thanks to my spell-check, it’s even spelled correctly)

Yes, these cookies date back to the elementary school days, when money earned from babysitting the neighborhood kids just wasn’t cutting it.  During a time when allowance wasn’t offered, and lemonade stands were overrated, my twin sister and I decided to bake a variety of cookies and sell them throughout the neighborhood, from our mobile cookie kiosk.

We made everything, from the traditional chocolate chip cookie, to no-bake cookies, even snickerdoodles.  But our biggest seller were these Root Beer cookies.  If you’ve never tried them before, you really need to make a batch – at least to be able to claim that you HAVE tried one.

Root Beer Cookies

1 cup butter, softened
2 cups packed brown sugar
2 eggs
1 cup milk
3/4 tsp root beer concentrate
4 cups flour
1 tsp bkg soda
1 tsp salt

Frosting:
3 1/2 cups powdered sugar
3/4 cup butter, softened
1 1/2 tsp root beer elixir
3 Tbsp water (to desired consistency)

In large bowl, cream butter and sugar until smooth. Then beat eggs into mixture. Beat in milk and root beer elixir.

Combine the flour, baking soda and salt. Gradually add to previous mixture.
Drop by tablespoons 3 inches apart onto cookie sheet.
Bake at 375 degrees for 9-11 minutes, or until lightly browned.
Remove to wire racks to cool, then frost when cooled.

Warning: This recipe makes about 6 dozen cookies! Perfect for selling in bulk. :)

I haven’t ever tried root beer cookies before. They sound good.

They are delicious! I had never heard of them either…I made them back in October. They do make a bunch! But that just leaves you that much more to eat!!!

Your right, I have never heard of such a thing. Root beer milk, but never root beer cookies. I guess I’ll give them a whirl.

What happens if you eat them with rootbeer? BTW, did you share any of the profits with the mom for providing the ingredients?

Uh, profits with the mom… does making you a birthday cake out on the deck at 2am count? (another post, another time) dang, I think we used your ingredients then, too!

I have never heard of them, and I might be afraid to try them! I generally love root beer, but not if it doesn’t have carbonated bubbles. Is there a way to get carbonation into the cookies?

I’ve never had these before, but now I’m curious. :) My kids like root beer, but not my husband (you know how most Latinos think it tastes like medicine). I’ve never thought about buying root beer extract.
